A friend telephones
and invites you to a party or potluck. “Just bring an appetizer,” your pal
says.
Instantly, your mind starts tumbling. What
can you turn up in a hurry?
Grab a back of tiny
tortilla shells. You know, those crunchy little cups? They’re sometimes called scoops or mini nacho cups.
Fill ‘em up with something
yummy, such as:
- egg salad
- flavored cream cheese
- guacamole
- ham salad
- hummus
- onion dip
- salsa and sour cream
- taco meat
- tuna salad
- or another delight.
Go ahead, and eat the broken chips. You know you wanna.
Garnish with a
sprig of parsley, a few shakes of paprika, or a tiny vegetable dicing. Now arrange the filled
tortilla cups on a plate, and you’re ready to go.
NOTE: If you love cooking and have time, you can make your own tortilla
shells, using Non-Stick Tortilla Shell Makers. You can also flip a muffin
tin over to shape them yourself.
